Ingredients:

1/4 tsp Salt
5 tbsp Unsalted butter
3 tbsp Shortening
4 – 6 tbsp Heavy cream
1/2 cup Granulated sugar
1/2 cup Bittersweet chocolate
8 tbsp Unsalted butter
1/2 cup Egg Beaters egg substitute
1 cup Heavy cream
1 cup Granulated sugar
Chocolate curls

Instructions:

  1. Prepare the Pie Crust:

    • In a medium bowl, combine flour and salt.
    • Grate cold butter into the flour using the medium side of a box grater.
    • Cut shortening into chunks and blend it into the flour mixture until pea-sized clumps form.
    • Stir in ice water with a fork until the dough begins to form.
    • Press the dough into a smooth, flat disc, wrap it in plastic, and refrigerate for at least 1 hour.
    • Roll out the dough on a lightly floured surface to a 13-inch circle and transfer it to a 9-inch pie plate.
    • Trim overhanging dough and crimp the edges.
    • Refrigerate the pie shell for 30 minutes.
  2. Preheat and Bake:

    • Preheat the oven to 400°F (200°C).
    • Prick the chilled pie shell all over with a fork.
    • Line the pie shell with foil and fill it with pie weights or dry beans or rice.
    • Bake for 20 minutes, then remove the foil and weights and bake for an additional 10-15 minutes until golden brown.
    • Let the pie shell cool for 15 minutes before filling.
  3. Prepare the Chocolate Filling:

    • In a small saucepan, heat cream and sugar over medium-high heat until sugar dissolves and the mixture comes to a boil.
    • Turn off the heat and stir in the bittersweet chocolate until melted and smooth.
    • Stir in unsalted butter until melted and smooth.
    • Scrape the chocolate mixture into the bowl of a heavy-duty electric mixer fitted with a paddle attachment.
    • Let the chocolate mixture stand until just warm, about 20 minutes.
    • Beat the chocolate mixture at medium speed for 2-3 minutes until the bottom of the bowl is no longer warm.
    • With the mixer running at medium speed, slowly pour in the egg beaters in a steady stream and continue to beat for a few more minutes until the mixture thickens around the edges and becomes paler in color.
  4. Assemble and Chill:

    • Pour the chocolate mixture into the prepared pie shell and refrigerate for at least 4-6 hours.
  5. Whip the Cream:

    • Just before serving, beat heavy cream with sugar until soft peaks form, either with a heavy-duty mixer or a handheld mixer.
    • Mound the whipped cream onto the chilled pie.
  6. Garnish and Serve:

    • Garnish the pie with chocolate curls for an extra touch of elegance.
