Instructions

  1. Prepare the Vanilla Cream Mixture:

    • Begin by pouring the heavy cream into a saucepan. Split the vanilla bean lengthwise and scrape out the seeds using the back of a knife. Add both the seeds and the vanilla pod to the cream. Stir gently to combine.
    • Place the saucepan over medium heat, bringing the mixture to a gentle simmer. Be sure to stir occasionally to prevent the cream from scorching.
  2. Prepare the Egg and Sugar Mixture:

    • While the cream is heating, separate the egg yolks and place them in a large bowl. Add the sugar to the yolks and whisk until the mixture becomes smooth and pale.
    • Sift in the cornstarch and continue to whisk until the ingredients are fully incorporated and the mixture is thick and glossy.
  3. Combine the Milk, Cream, and Egg Mixture:

    • Once the milk and cream mixture is nearly at a simmer (just beginning to bubble around the edges), remove the vanilla pod. Slowly pour the hot liquid into the egg mixture, stirring constantly with a whisk to temper the eggs and prevent them from curdling.
    • Return the entire mixture to the saucepan and cook over low heat, stirring constantly. Keep stirring until the pudding thickens and coats the back of a spoon, about 5 minutes.
  4. Assemble the Vanilla Pudding:

    • Once the pudding has thickened, remove it from the heat and let it cool for a few minutes.
    • Carefully divide the pudding into four 180g serving glasses, filling each glass halfway.
  5. Add Fresh Raspberries:
