Next, pour the fresh cream into a saucepan and heat it gently over medium heat. Allow it to come to a near-boil, then remove from the heat. Immediately add the chopped white chocolate to the hot cream and stir continuously until the chocolate has completely melted and the mixture is smooth.

Once the chocolate has melted, squeeze out the excess water from the gelatin sheets and add them to the mixture, stirring until the gelatin is fully dissolved and incorporated.

Transfer the resulting glaze into a clean bowl. To prevent a skin from forming, cover the glaze with plastic wrap, ensuring itโ€™s in direct contact with the surface. Allow it to cool to room temperature, then place the bowl in the fridge to chill completely.
