Instructions

  1. Prepare the Besan Tikkis: In a spacious mixing bowl, combine the gram flour (besan), finely chopped onion, salt, dry red chilli powder, khuskhus, and 2 tablespoons of sunflower oil. Mix the ingredients thoroughly until they are well incorporated, then add the curd. Knead gently to form a soft dough.

  2. Shape the Tikkis: Divide the dough into lemon-sized portions and shape them into flat cutlets or tikkis.

  3. Fry the Tikkis: Heat oil in a deep frying pan over medium heat. Once the oil is sufficiently hot, gently place the besan tikkis into the pan, frying them until they turn golden brown and crispy. This should take about 3-4 minutes on each side. Once cooked, transfer the tikkis to a kitchen napkin to drain any excess oil, then set them aside.

  4. Prepare the Gravy: In a heavy-bottomed pan, heat 2 teaspoons of sunflower oil over medium heat. Once the oil shimmers, add the cumin seeds and cloves, allowing them to sputter for a few seconds to release their flavors.

  5. Sauté the Onion Puree: Incorporate the onion puree into the pan and sauté for about 5 minutes, or until it changes color and becomes fragrant. Add the ginger garlic paste, stirring continuously until the raw aroma dissipates, approximately 2 minutes.

  6. Add Tomato Puree and Spices: Stir in the tomato puree and chopped green chillies, cooking the mixture until it thickens and the oil separates from the gravy. This usually takes about 5-7 minutes.

  7. Combine and Simmer: Mix in the coriander powder, ensuring it’s well distributed throughout the gravy. Once the gravy is nicely combined, gently place the fried besan tikkis into the sauce. Add 3 cups of water and bring the mixture to a gentle simmer. Cover the pan and let it cook on low heat for about 15-20 minutes, allowing the tikkis to absorb the flavors and soften.

  8. Final Touches: Once the kadhi has simmered and the tikkis are tender, remove the pan from heat. Add freshly chopped coriander leaves for garnish.

  9. Serve: Present the Sindhi Dharan Ji Kadhi hot, accompanied by warm phulkas or tawa parathas, and a refreshing carrot salad on the side for a complete and fulfilling meal.

This Sindhi Dharan Ji Kadhi brings together the wholesome taste of besan tikkis immersed in a rich, flavorful tomato gravy, making it an ideal choice for both festive occasions and everyday meals. Enjoy this dish as part of a traditional Sindhi feast or as a comforting standalone dinner!
