Description:
Aloo Gobi Methi Tuk is a simple and flavorful dish from Sindhi cuisine. Potatoes and cauliflower are cooked with everyday spices and enhanced by the addition of fenugreek (methi), which gives it a unique and aromatic flavor. This dish can be enjoyed as part of your daily meal and pairs wonderfully with Sindhi Kadhi and flatbreads.

Ingredients:

  • 2 Potatoes, chopped
  • 1 cup Cauliflower, chopped
  • 1 cup Fenugreek (Methi), washed and chopped
  • Oil, as needed
  • 1 tsp Cumin seeds (Jeera)
  • A pinch of Asafoetida (Hing)
  • 1 tsp Ginger paste
  • 1/2 tsp Green chili paste
  • 2 tsp Chat Masala powder
  • Salt, to taste

Preparation Time: 15 mins
Cook Time: 20 mins

Instructions:

  1. Heat oil in a pan. Add the chopped potatoes and cook them until they become tender. Once cooked, remove them from the pan and set them aside.
  2. In the same pan, add a little more oil and sauté the cauliflower until golden. Remove from the pan and set aside.
  3. Add some more oil to the pan and add cumin seeds and asafoetida. Allow it to cook for about 10 seconds.
  4. Now add the ginger and green chili paste, and cook for 2 minutes.
  5. Add the chopped fenugreek (methi) to the pan and cook for 5 minutes until the methi wilts.
  6. Once the methi is cooked, add the potatoes and cauliflower back into the pan. Stir well to combine.
  7. Add chat masala and salt, and cook for another 2 minutes.
  8. Serve Aloo Gobi Methi Tuk hot with Sindhi Kadhi and flatbreads.
