Ingredients:

Ingredient Quantity
Garlic 3 cloves
Olive oil 1/4 cup
Lemon juice 2 tablespoons
Honey 2 tablespoons
Parsley (chopped) 2 tablespoons
Unsalted butter 2 tablespoons
Cayenne 2 teaspoons
Ground black pepper 1 1/4 teaspoons
Salt 3/4 teaspoon
Crushed red pepper flakes 1/4 teaspoon
Dried whole thyme 1/4 teaspoon
Dried rosemary leaves 2 pinches
Dry oregano 2 pinches

Instructions:

  1. Prepare Seasoning Mix:

    • Combine all the seasoning mix ingredients in a food processor and set aside.
    • Store the mix in a sealed container for future use; it keeps indefinitely.
  2. Marinate the Prawns:

    • In a bowl, blend garlic, olive oil, 2 tablespoons of the seasoning mix, lemon juice, honey, and soy sauce.
    • Add the prawns and chopped parsley to the mixture, toss well to coat.
    • Refrigerate overnight to allow the flavors to meld.
  3. Preheat and Cook:

    • Preheat oven to 500°F.
    • Place the marinated prawns with the marinade in a large, heavy skillet, ensuring they fit in a single layer or cook in batches.
    • Bake in the oven for 2 to 3 minutes, then shake the pan to ensure even cooking, and repeat for another 2 to 3 minutes.
    • The mixture should bubble, and the prawns will begin to turn opaque.
  4. Emulsify the Butter:

    • Transfer the skillet to the stovetop over medium heat.
    • Begin adding the unsalted butter in 1 to 2 tablespoon increments, shaking the pan continuously.
    • Allow the butter to emulsify into the mixture before adding more, taking about 4 to 5 minutes to complete the process.
  5. Serve and Enjoy:

    • Once done, pour the Cajun BBQ Prawns onto a platter.
    • Serve immediately with plenty of good, crispy bread to savor every flavorful bite.
