Instructions:

1. Prepare the Chicken Marinade:

Start by thoroughly washing and cleaning the chicken breasts, leaving them intact. For the marinade, combine garlic, mixed herbs, lemon juice, extra virgin olive oil, Tabasco sauce, red chilli flakes, parsley leaves, honey, and salt in a mixing bowl. Place the chicken breasts into the bowl and massage the marinade thoroughly into the meat. Let the chicken marinate for at least 1 hour, allowing the flavors to infuse the meat.

2. Cook the Chicken:

Heat a skillet over medium heat. Once hot, add the marinated chicken breasts to the skillet and cook for about 3 minutes on each side, basting with the remaining marinade while the chicken roasts in the pan. After both sides are golden brown and cooked through, transfer the chicken to a plate and set it aside to rest.

3. Prepare the Steak Sauce:

In the same skillet, pour in the remaining marinade. Make a slurry by mixing the all-purpose flour with water until smooth, then add the mixture into the pan with the marinade. Bring it to a boil and let the sauce cook until it thickens to a desirable consistency. Once thickened, remove from heat and set aside.

4. Pan-Roast the Vegetables:

In a separate skillet, heat olive oil over medium-high heat. Add the garlic and sauté until it turns light brown—about 1 minute. Add the carrot, zucchini, baby corn, green beans, and red bell pepper, sautéing the vegetables just until they are tender yet still crunchy. Season with salt, mixed herbs, and parsley, mixing everything thoroughly. Turn off the heat and set the vegetables aside.

5. Make the Potato Mash:

While the vegetables are cooking, prepare the mashed potatoes. In a mixing bowl, combine the hot boiled potatoes, salt, butter, black pepper, and lemon juice. Mash everything together using the back of a spoon or ladle until the potatoes are smooth and creamy. Set aside.

6. Assemble the Chicken Sizzler:

Preheat a sizzler pan in the oven or on the stovetop to create that iconic sizzling effect. In a serving plate, arrange the pan-roasted vegetables and a generous portion of potato mash. Place the pan-seared chicken breast on top. Pour the steak sauce over the chicken just before serving, ensuring it remains hot and flavorful.

7. Serve:

Serve this Chicken Steak with Pan-Roasted Vegetables & Potato Mash alongside a refreshing Cinnamon-Spiced Orange Iced Tea and finish the meal with a rich dessert, such as Dark Chocolate Pots De Crème. Enjoy a complete and mouthwatering meal!

Notes:

  • The vegetables can be customized based on what you have available. Feel free to swap out zucchini for other vegetables like bell peppers or mushrooms.
  • Ensure the potatoes are mashed while hot for a smoother texture, and use a potato masher or even a fork for a rustic feel.
  • If you’re looking to make the dish spicier, increase the Tabasco sauce or red chili flakes in the marinade to your desired level of heat.

This Chicken Steak with Pan-Roasted Vegetables & Potato Mash recipe is a harmonious balance of tender chicken, vibrant vegetables, and creamy mashed potatoes, all coming together with a delectable homemade steak sauce. It’s perfect for any occasion where you want to enjoy a satisfying meal with a touch of elegance.
