Instructions

- Chop or grind half of the peanuts into a fine powder using a blender.
- Roughly chop or crush the remaining peanuts.
- Similarly, roughly chop the green bell pepper and finely chop the onion.
- Place the chicken breasts in a bowl, pour 1 tablespoon of sesame oil, and mix well.
- Add 1 teaspoon of salt, crushed peanuts, crushed red pepper flakes, and black pepper.
- Mix with 2 tablespoons of mushroom soy sauce and 1 tablespoon of groundnut oil.
- Allow the chicken to marinate for at least 15 minutes.

- In a mixing jug, combine cider vinegar, 2 tablespoons of mushroom soy sauce, tomato puree, dark brown sugar, and Β½ teaspoon of salt.
- Mix cornflour with a little cold water and add half of it to the sauce mixture.

- Heat some groundnut oil in a wok over medium-high heat.
- Quickly add the chili powder followed by the finely chopped onion. Fry until the onion turns soft and begins to caramelize.
- Add a bit more groundnut oil to the wok and let it heat up.
- Toss in the chopped green bell pepper, increase the heat, and stir-fry for about a minute.
- Add a little more oil if needed, then add the marinated chicken mixture.
- Stir-fry for approximately two minutes or until the chicken is well-seared.
- Pour the sauce mixture from the jug into the wok.
- Cook for an additional 2 minutes or until the chicken is cooked through and firm.
- Adjust the sauce thickness to your liking by adding more cornflour or hot water.
- Transfer the flavorful concoction into a warmed serving bowl.
