- 2 cups chicken broth
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 2 teaspoons crushed red pepper flakes
- 1/2 head Napa cabbage, shredded
- 1 cup water
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
Directions:
-
Saute Mushrooms and Garlic:
- In a large pot, heat some oil over medium heat.
- Add sliced shiitake mushrooms and minced garlic to the pot.
- Saute for about 4 minutes until the mushrooms are tender and fragrant, stirring frequently to prevent burning.
-
Add Broth and Seasonings:
- Pour in the chicken broth, rice vinegar, soy sauce, and crushed red pepper flakes into the pot with the mushrooms and garlic.
- Stir well to combine all the ingredients.
- Bring the mixture to a gentle boil over medium heat.
-
Incorporate Chicken and Cabbage:
- Once the broth mixture is boiling, add in the shredded Napa cabbage and any cooked chicken you’re using.

Thicken the Soup:
- In a small bowl, combine the cold water and cornstarch, stirring until the cornstarch is fully dissolved.

- Let the soup simmer for an additional 2 minutes or until it reaches your desired thickness.
-
Finish with Sesame Oil:
- Remove the pot from the heat.
- Stir in the sesame oil, ensuring it’s evenly distributed throughout the soup.
-
Serve and Enjoy:
- Ladle the hot and sour soup into bowls.
- Garnish with some fresh cilantro or green onions if desired.
