Prep Time: 25 minutes
Cook Time: 30 minutes
Total Time: 55 minutes
Servings: 4

Ingredients:

  • 4 shiitake mushrooms, thinly sliced
  • 1 garlic clove, minced
  • 2 cups chicken broth
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 2 teaspoons crushed red pepper flakes
  • 1/2 head Napa cabbage, shredded
  • 1 cup water
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil

Directions:

  1. Saute Mushrooms and Garlic:

    • In a large pot, heat some oil over medium heat.
    • Add sliced shiitake mushrooms and minced garlic to the pot.
    • Saute for about 4 minutes until the mushrooms are tender and fragrant, stirring frequently to prevent burning.
  2. Add Broth and Seasonings:

    • Pour in the chicken broth, rice vinegar, soy sauce, and crushed red pepper flakes into the pot with the mushrooms and garlic.
    • Stir well to combine all the ingredients.
    • Bring the mixture to a gentle boil over medium heat.
  3. Incorporate Chicken and Cabbage:

    • Once the broth mixture is boiling, add in the shredded Napa cabbage and any cooked chicken you’re using.
    • Reduce the heat to low and let the soup simmer, uncovered, for about 5 minutes, allowing the flavors to meld together.
  4. Thicken the Soup:

    • In a small bowl, combine the cold water and cornstarch, stirring until the cornstarch is fully dissolved.
    • Slowly pour the cornstarch mixture into the simmering soup, stirring continuously.
    • Let the soup simmer for an additional 2 minutes or until it reaches your desired thickness.
  5. Finish with Sesame Oil:

    • Remove the pot from the heat.
    • Stir in the sesame oil, ensuring it’s evenly distributed throughout the soup.
  6. Serve and Enjoy:

    • Ladle the hot and sour soup into bowls.
    • Garnish with some fresh cilantro or green onions if desired.
    • Serve piping hot and savor the spicy, tangy flavors!
