Instructions:

  1. Prepare the Vegetables:
Heat a grill or a pan over medium heat. Toss the sliced green, yellow, and red bell peppers along with the onion in a little oil, cumin powder, paprika powder, black pepper, thyme leaves, and salt. Grill or sauté the vegetables for about 5–7 minutes until they are tender but still slightly crisp. Set aside.

  2. Make the Stir-Fried Beans:
In a pan, heat some oil over medium heat. Add the sliced onion and sauté until translucent. Add the soaked rajma (kidney beans) and chopped tomatoes to the pan. Stir in the dried oregano, cumin powder, paprika powder, black pepper, and salt. Cook for about 10–12 minutes, allowing the beans to soften and absorb the spices. Set aside.

  3. Warm the Tortillas:
While the vegetables and beans are cooking, warm the tortillas on a skillet or in the microwave for about 30 seconds until soft and pliable.

  4. Assemble the Fajitas:
To serve, place the warm tortillas on a plate. Add a portion of the grilled vegetables and stir-fried beans to each tortilla. Top with tomato salsa, sour cream, guacamole, and cheddar cheese.

  5. Serve:
Enjoy the sizzling Mexican vegetarian fajitas as a fun, interactive meal. Assemble your fajitas with your preferred toppings and savor the delicious Tex-Mex flavors.
