Cooking Time: 20 minutes
Total Time: 35 minutes
Servings: 6
Ingredients:
Quantity | Ingredient |
---|---|
1 lb | Lean ground beef |
1 cup | Chicken broth |
2 cups | Vegetable broth |
1/2 cup | All-purpose flour |
1 cup | Sour cream |
1 can | Diced green chilies |
1 bag | Tortilla chips |
2 cups | Shredded Monterey Jack cheese |
1/2 cup | Chopped green onion |
– | Cooking spray |
Instructions:
-
In a skillet over medium heat, brown the ground beef, breaking it into crumbles as it cooks. Once fully cooked, drain any excess fat.
-
Stir in the taco seasoning, ensuring it’s evenly distributed throughout the meat.
-
In a small bowl, whisk together the chicken broth, vegetable broth, and all-purpose flour until well combined.
-
Pour the broth mixture into the skillet with the meat. Bring the mixture to a boil, stirring occasionally, until it thickens slightly.
-
Once thickened, reduce the heat to low and stir in the sour cream and diced green chilies. Allow the mixture to simmer gently while you prepare the remaining ingredients.
-
Preheat your oven to 375°F (190°C). Spray a 13×9 inch baking dish with cooking spray to prevent sticking.
-
Spread half of the tortilla chips evenly across the bottom of the prepared baking dish.
-
Top the chips with half of the beef mixture, ensuring an even layer.
-
Pour half of the sauce over the beef layer, followed by half of the shredded Monterey Jack cheese and half of the chopped green onions.
-
Repeat the layers, starting with the remaining tortilla chips, followed by the beef mixture, sauce, cheese, and green onions.
-
Place the assembled casserole in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
-
Once cooked, remove the casserole from the oven and let it stand for 5 minutes before serving.
