Instructions:

Prepare the Beef:
- Heat half of the oil in a wok or large fry pan over high heat.
- Stir fry the beef in 2 batches, tossing frequently for about 2 minutes or until just sealed.
- Transfer the beef to a bowl and set aside.

- Reduce the heat to medium and add the remaining oil to the wok.
- Add the onion and curry paste, and cook for a further 2 minutes or until aromatic.
- Stir in the red capsicum, coconut milk, and water.
- Bring the mixture to a boil, then reduce the heat and simmer for about 3 minutes.
