Red Beef Curry with Hokkien Noodles

2 Rump steak
400 g Onion
1 Red curry paste
1 Red capsicum
1 can Coconut milk
185 ml Water
60 g Baby bok choy
1 Fish sauce
500 g Hokkien noodles
1 Lime juice
1 Brown sugar
2 Spring onions

Instructions:

  1. Prepare the Beef:

    • Heat half of the oil in a wok or large fry pan over high heat.
    • Stir fry the beef in 2 batches, tossing frequently for about 2 minutes or until just sealed.
    • Transfer the beef to a bowl and set aside.
  2. Cook the Curry Base:

    • Reduce the heat to medium and add the remaining oil to the wok.
    • Add the onion and curry paste, and cook for a further 2 minutes or until aromatic.
    • Stir in the red capsicum, coconut milk, and water.
    • Bring the mixture to a boil, then reduce the heat and simmer for about 3 minutes.
  3. Prepare the Noodles and Vegetables:

    • While the curry simmers, put the Hokkien noodles in a heatproof bowl and cover them with boiling water.
    • Allow the noodles to stand for 2 minutes to soften slightly, then drain.
    • Add the baby bok choy to the curry and cook for about 2-3 minutes or until just tender.
  4. Combine and Serve:

    • Add the cooked beef, drained noodles, fish sauce, lime juice, brown sugar, and spring onions to the curry.
    • Toss everything together to combine and heat through.
