Sizzling Spicy Sardines Stir-Fry

Spicy Sardine Stir-Fry (Sarden Tumis Pedas)

Ingredients:

  • 1 small can of sardines (Botan brand)
  • 10 red chilies
  • 5 shallots
  • 2 garlic cloves
  • 1 thumb-sized piece of ginger, smashed
  • 1/2 tomato
  • Sweet soy sauce, to taste
  • Salt, sugar, and seasoning, to taste
  • Water, as needed
  • Cooking oil

Instructions:

  1. Prepare the Ingredients: Slice the chilies, shallots, and garlic. Cut the tomato into small pieces. Smash the ginger with the flat side of a knife to release its flavor.

  2. Heat the Oil: In a pan, heat a generous amount of cooking oil over medium heat.

  3. Cook the Aromatics: Once the oil is hot, add the shallots, garlic, chilies, and tomato. Sauté until the shallots become translucent and the chilies start to release their fragrance.

  4. Add Sardines: Gently add the sardines from the can into the pan.

  5. Season and Simmer: Pour in the sweet soy sauce to taste. Add the smashed ginger, and season with salt, sugar, and your choice of seasoning. Stir well to combine.

  6. Adjust Consistency: Add a little water if needed to achieve your desired consistency. Simmer for a few minutes to allow the flavors to meld together.

  7. Taste and Adjust: Taste the dish and adjust the seasoning if necessary.

  8. Serve: Once the flavors are balanced and the sardines are heated through, your spicy sardine stir-fry is ready to be served. Enjoy!

Note: This dish pairs wonderfully with steamed rice or can be enjoyed as a flavorful topping for a variety of dishes.
