Spicy Sardine Stir-Fry (Sarden Tumis Pedas)
Ingredients:
- 1 small can of sardines (Botan brand)
- 10 red chilies
- 5 shallots
- 2 garlic cloves
- 1 thumb-sized piece of ginger, smashed
- 1/2 tomato
- Sweet soy sauce, to taste
- Salt, sugar, and seasoning, to taste
- Water, as needed
- Cooking oil
Instructions:

Prepare the Ingredients: Slice the chilies, shallots, and garlic. Cut the tomato into small pieces. Smash the ginger with the flat side of a knife to release its flavor.

Heat the Oil: In a pan, heat a generous amount of cooking oil over medium heat.

Cook the Aromatics: Once the oil is hot, add the shallots, garlic, chilies, and tomato. Sauté until the shallots become translucent and the chilies start to release their fragrance.

Add Sardines: Gently add the sardines from the can into the pan.

Season and Simmer: Pour in the sweet soy sauce to taste. Add the smashed ginger, and season with salt, sugar, and your choice of seasoning. Stir well to combine.

Adjust Consistency: Add a little water if needed to achieve your desired consistency. Simmer for a few minutes to allow the flavors to meld together.

Taste and Adjust: Taste the dish and adjust the seasoning if necessary.
