Ingredients:
- 2 cups vegetarian ground beef
- 6 ounces firm tofu
- 2-3 tablespoons red wine vinegar
- 2 tablespoons dry red wine
- 2 tablespoons brandy
- 2 tablespoons soy sauce
- 4 tablespoons cornmeal
- 1 garlic clove, minced
- 1 tablespoon paprika
- 1 chipotle chile in adobo, minced
- 1 tablespoon chili powder
- 1 tablespoon onion powder
- 1/2 teaspoon salt
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cinnamon
Instructions:

- For Version #1 (New Orleans Chaurice):
- In a bowl, combine crushed garlic, paprika, minced parsley, chili powder, thyme, salt, onion powder, cinnamon, powdered bay, and allspice.

- For Version #2:
- Omit vinegar and wine.
- Combine ground onion, minced parsley, crushed garlic, chili powder, liquid smoke, salt, thyme, cayenne, red pepper flakes, black pepper, and allspice.
- For Version #1 (New Orleans Chaurice):
- Prepare the Sausage Mixture:
- In a large bowl, crumble tofu and mix in red wine vinegar, dry red wine, brandy, soy sauce, cornmeal, minced garlic, paprika, chipotle chile, chili powder, onion powder, salt, oregano, cumin, and cinnamon.
- Combine the seasoning mixture with the sausage mixture.
- Form the Sausage Patties or Links:
- Using your hands, shape the mixture into patties or links according to your preference.
- Cook the Sausages:
