Tumis Kacang Panjang with Tofu and Tempe: A Flavorful Stir-Fry Delight

Ingredients:

  • 1 bunch of long green beans, cut into 3 cm pieces
  • 2 blocks of tofu (5×5 cm each), diced
  • 1 block of tempeh (10×3 cm), diced
  • 1 long carrot, sliced
  • 6 beef meatballs
  • For the Spice Blend:
    • 4 cloves of garlic, minced
    • 4 shallots, minced
    • 1 small onion, finely chopped
    • 1 piece of galangal (about 2 cm), sliced
    • 4 medium tomatoes, chopped
    • 2 bay leaves
    • 2 tablespoons of oyster sauce
    • 5 tablespoons of sweet soy sauce
    • 10 red chili peppers, whole
  • Cooking oil for sautéing
  • 2 glasses of water
  • Salt and pepper to taste

Instructions:

  1. Prepare the Ingredients:

    • Cut the long green beans into 3 cm pieces.
    • Dice the tofu and tempeh into small cubes.
    • Slice the carrot into thin rounds.
    • Mince the garlic and shallots, and finely chop the onion.
    • Chop the tomatoes and slice the galangal.
    • Keep the red chili peppers whole to add a burst of flavor.
  2. Heat the Oil:

    • In a large pan or wok, heat a generous amount of cooking oil over medium heat.
  3. Sauté the Aromatics:

    • Add the minced garlic and shallots to the hot oil. Sauté until they become fragrant.
    • Add the chopped onion, whole red chili peppers, chopped tomatoes, galangal slices, and bay leaves. Stir and cook until the tomatoes are softened and the mixture is aromatic.
  4. Cook the Carrot and Meatballs:

    • Add the sliced carrot to the pan and cook until it starts to become tender.
    • Introduce the beef meatballs and stir gently, allowing them to cook through and release their flavors.
  5. Add the Tofu, Tempeh, and Carrot:

    • Gently fold in the diced tofu and tempeh. Stir carefully to avoid breaking up the tofu.
    • Continue to cook until the tofu and tempeh are lightly browned and heated through.
  6. Incorporate the Green Beans and Sauces:

    • Add the long green beans to the pan.
    • Pour in the oyster sauce and sweet soy sauce. Stir well to combine all ingredients and ensure the green beans are coated with the sauces.
  7. Simmer:

    • Pour in the water and bring the mixture to a boil.
    • Reduce the heat and let it simmer until the green beans are tender and the flavors meld together, about 5-10 minutes.
  8. Season and Finish:

    • Taste and adjust seasoning with salt and pepper according to your preference.
    • Stir well and cook for an additional minute.
  9. Serve:

    • Once everything is well-cooked and seasoned, turn off the heat.
