Ingredients:
- 2 cups flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon canola oil
- 1 onion, chopped
- 1 celery stalk, diced
- 2 cloves garlic, minced
- 3 cups beef broth
- 1 can diced tomatoes
- 2 cups baby red potatoes, quartered
- 1 cup mushrooms, sliced
- 1 cup barley
- 1/2 cup red wine
- 4-5 sprigs fresh oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried basil
Instructions:
- In a large ziplock bag, combine flour, salt, and pepper.
- Add the beef to the bag and shake well to coat evenly.
- Heat canola oil in a large skillet over medium-high heat.
- Add the coated beef, chopped onion, diced celery, and minced garlic to the skillet.
- Cook for 6-7 minutes, stirring occasionally, until the beef is no longer pink and the vegetables are slightly tender.
- Transfer the beef mixture to a crockpot.
- Add the beef broth, diced tomatoes, quartered baby red potatoes, sliced mushrooms, barley, red wine, fresh oregano, dried thyme, and dried basil to the crockpot.
- Stir everything together until well combined.
- Cover and cook on high for 5-6 hours, or on low for 10-12 hours, until the beef is tender and the flavors are well blended.
