Prepare the Meat:
- Coat the leg of lamb with a moderate amount of olive oil, then cover with mixed herbs.

Assemble in the Camp Oven:
- Place the prepared meat in the camp oven, ensuring it is not touching the sides or lid.
- Arrange sliced onions around the meat.
- Pour in the beef stock.

Adjust and Cover:
- Check to ensure the meat is not going to touch the lid. If it is, cover just the top with one layer of foil.

Set up the Coals:
- Make a base of hot coals for the camp oven.
- Place the camp oven on the coals and cover the lid with one shovelful of hot coals.

Begin Cooking:
- Allow the roast to cook for 1 hour, then check the liquid content. Top up with beef stock if necessary.

Maintain Heat:
- Replenish the coals both on top and bottom every hour.
- Continue cooking for 2-3 hours, checking every hour and re-doing the coals to maintain an even heat.

Prepare Gravy:
- Once the meat is cooked, remove it from the camp oven and set it aside.
- Scoop out the potatoes from the bottom of the camp oven and set them aside.
- Spoon out the liquid into a microwave-safe jug, and make up with tap water to approximately 1 1/2 liters.
- Add Gravox powder while briskly whisking.
- Microwave on high for 2 1/2 minutes, whisk again, then microwave for 1 1/2 minutes. Repeat until the gravy is cooked and thickened.

Serve:
- Serve the sliced meat with the potatoes from the camp oven as an accompaniment, along with the freshly prepared gravy.
