Smoked Mackerel Brengkesan Recipe

Ingredients:

  • Smoked mackerel slices
  • 6 pieces of wuluh starfruit
  • 1 bunch of basil leaves
  • 4 kaffir lime leaves
  • Sugar, salt, and powdered broth to taste (recommended: Totole brand)
  • Banana leaves for wrapping

Spice Paste:

  • 10 shallots
  • 7 cloves of garlic
  • 5 large red chilies (adjust to taste)
  • Handful of bird’s eye chilies (adjust to taste)
  • 4 candlenuts
  • 1 knob of ginger
  • 1 knob of galangal
  • 1 piece of turmeric
  • 1 piece of lesser galangal
  • 2 tsp coriander powder
  • 3 tomatoes

Instructions:

  1. Combine all the spice paste ingredients in a bowl. Add smoked mackerel, wuluh starfruit, basil leaves, sugar, salt, and powdered broth. Mix well until evenly coated.

  2. Prepare banana leaves. Arrange the mackerel mixture on the banana leaves, wrap, and secure with toothpicks.

  3. Steam for approximately 30 minutes until cooked through and fragrant with brengkesan aroma. Remove from steamer and serve hot.
