Veal Roll-Ups with Ham and Cheese

Category: Main Courses
Servings: 4

Ingredients:

Ingredient Quantity
Veal Topside (Sottofesa) 400g
Cooked Ham (Prosciutto cotto) 100g
Smoked Provola Cheese (Provola affumicata) 100g
Fresh Sage (Salvia) To taste
Extra Virgin Olive Oil 30g
Black Pepper To taste
Butter 30g
Table Salt To taste
White Wine 40g
Fresh Thyme (Timo) To taste
Fresh Rosemary (Rosmarino) To taste
All-Purpose Flour (Farina 00) 50g
Water 40g

Instructions:

  1. Prepare the Veal: To start, ensure the veal slices are thin enough. If necessary, use a meat mallet to gently flatten them to your desired thickness. This step will help the veal cook evenly and remain tender.

  2. Stuff the Veal: Lay a thin slice of smoked provola cheese onto each veal slice. Add a slice of cooked ham over the cheese. You can also add a few fresh sage leaves for extra flavor. Once the veal is stuffed, carefully roll it up tightly, securing the ends of the rolls with toothpicks to prevent the filling from escaping during cooking.

  3. Prepare the Pan: Heat a large pan over medium-high heat and add the extra virgin olive oil and butter. Allow the butter to melt and the oil to heat up, which will provide a rich base for searing the veal rolls.

  4. Flavor the Oil: Place the sprigs of thyme, rosemary, and sage into the pan. Tie them together with cooking twine if needed to keep them bundled. Let them infuse the oil and butter for about 3 minutes. This will help release the aromatic oils from the herbs, creating a flavorful base for the veal.

  5. Cook the Veal Roll-Ups: Once the herbs have infused the oil, increase the heat and gently place the veal rolls in the pan. Season with salt and black pepper to taste. Sear the veal rolls for about 3 minutes on one side until they develop a nice golden-brown crust. Then, flip the rolls over and sear for an additional 1 minute on the other side.

  6. Deglaze with Wine: Once the veal is browned on both sides, pour in the white wine to deglaze the pan. This will add depth of flavor to the dish while also helping to lift any flavorful bits stuck to the bottom of the pan.

  7. Add Flour and Simmer: Sprinkle the flour over the veal rolls and stir to coat evenly. This will help thicken the sauce as the veal continues to cook. Lower the heat and cover the pan with a lid. Allow the veal to cook for about 15-20 minutes, turning occasionally to ensure even cooking. The veal will become tender, and the sauce will thicken into a creamy consistency.

  8. Finishing Touches: After cooking, remove the aromatic herb bundle from the pan. Check the seasoning, and adjust the salt and pepper if necessary. The veal should be tender and enveloped in a creamy, flavorful sauce.

  9. Serve: Carefully remove the toothpicks from the veal rolls and plate them. Spoon the sauce over the rolls and serve hot. These veal roll-ups are perfect with a side of roasted vegetables or a fresh salad.

Enjoy your delicious and tender veal roll-ups with ham and cheese, a comforting dish that is perfect for a family dinner or a special occasion.

This recipe combines the richness of veal, the smokiness of provola cheese, and the savory goodness of cooked ham, creating a meal that is both elegant and satisfying.
