Cook the Rice
Start by preparing the sushi rice. In a tall saucepan, pour in the water and rice. Cover the pan with a lid and bring the water to a boil. Once the water is boiling, reduce the heat to low and let the rice cook for about 15 minutes. It’s important not to stir the rice while it’s cooking. Once done, transfer the rice to a large bowl. -
Season the Rice
Add the rice vinegar to the rice and stir gently with a wooden spoon or spatula. Allow the rice to cool to room temperature. To speed up the cooling process, you can fan it with a small fan or plastic plate while mixing to help the vinegar evaporate more quickly. Prepare the Grapefruit
Peel the second grapefruit using the “supreme” method, cutting away the pith and separating the segments. Once peeled, slice the segments into thin strips or cubes. -
