Spaghetti with Smoked Salmon 🍝🐟
Overview:

Ingredients:
- 2 tbsp olive oil
- 1 cup button mushrooms, finely sliced
- 1 cup dry white wine
- 1 1/2 tbsp fresh dill, chopped
- 1/4 tsp dried dill
- 1 1/4 tbsp fresh chives, chopped
- 8 oz low-fat unsweetened soy cream
- 200g smoked salmon, flaked
- Ground black pepper, to taste
- Lemon juice, to taste
- 12 oz spaghetti
- Chives, for garnish
Instructions:
- 
Prepare the Sauce: - Heat the olive oil in a large nonstick frypan over medium heat.
- Add the finely sliced mushrooms and sauté for 4 to 5 minutes until softened.
- Pour in the dry white wine and increase the heat, allowing it to boil rapidly for about 5 minutes until considerably reduced.
- Stir in the fresh dill, dried dill, and fresh chives.
- Fold in the low-fat unsweetened soy cream (or fromage frais) and smoked salmon, reheating gently. Avoid boiling the sauce to prevent curdling.
- Season with ground black pepper and lemon juice to taste.
- Cover the pan to keep the sauce warm.

Cook the Pasta: - Meanwhile, cook the spaghetti in a large saucepan of lightly salted boiling water until just tender.
- Drain the cooked spaghetti, rinse thoroughly in boiling water, and drain again.
 
- 
Combine and Serve: - Transfer the drained spaghetti into a warmed serving dish.
- Toss the spaghetti gently with the prepared smoked salmon sauce until well combined.
- Garnish with additional chives before serving.
