The addition of thyme adds an aromatic touch, and the smoked cheese imparts a rich, savory flavor. Here’s how to prepare it!

Ingredients

Ingredient Quantity
All-purpose flour 250g
Butter (cold, cubed) 125g
Egg 1
Coarse salt 5g
Fresh thyme To taste
Chiodini mushrooms 500g
Smoked scamorza cheese 210g
Fresh cream (liquid) 100g
Eggs 2
Fine salt To taste
Black pepper To taste

Instructions

  1. Prepare the Savory Pastry (Frolla Salata):
To begin, prepare the savory pastry dough. In a food processor equipped with metal blades, combine the all-purpose flour and cold butter. Add the coarse salt and pulse until the mixture resembles coarse crumbs. Add one egg and pulse again until the dough begins to come together.

  2. Form the Dough:
Transfer the mixture onto a floured surface and work quickly with your hands to bring it into a dough. Shape it into a ball and wrap it in plastic wrap. Place the dough in the refrigerator to chill for at least one hour.

  3. Prepare the Mushrooms:
While the dough rests, clean the chiodini mushrooms. Gently remove the earthy stems using a knife and rinse the mushrooms carefully. In a large pot, bring water to a boil. Add the mushrooms and cook for about 10 minutes, skimming off any foam that forms on the surface. Once boiled, drain the mushrooms and set them aside to cool.

  4. Prepare the Cheese:
Cut the smoked scamorza cheese into small cubes. Set aside for later use.

  5. Roll Out the Dough:
After the resting time, remove the dough from the refrigerator. On a lightly floured surface, roll the dough to a thickness of about 5-6 mm. Carefully line a tart pan with the dough, trimming the excess edges.

  6. Prepare the Filling:
In a mixing bowl, whisk together the two eggs, fresh cream, fine salt, black pepper, and fresh thyme. Once the mixture is smooth, add the boiled mushrooms and stir to combine.

  7. Assemble the Tart:
Evenly distribute the mushroom and egg mixture over the prepared dough in the tart pan. Scatter the smoked scamorza cheese cubes on top of the filling, ensuring an even distribution.

  8. Bake and Serve:
Preheat the oven to 180ยฐC (350ยฐF). Place the tart in the oven and bake for 35-40 minutes, or until the filling is set and golden brown on top.

  9. Garnish and Serve:
Once baked, remove the tart from the oven and allow it to cool slightly. Garnish with a few sprigs of fresh thyme for an aromatic finish. Slice and serve warm or at room temperature.
