Prepare the Savory Pastry (Frolla Salata): 
 To begin, prepare the savory pastry dough. In a food processor equipped with metal blades, combine the all-purpose flour and cold butter. Add the coarse salt and pulse until the mixture resembles coarse crumbs. Add one egg and pulse again until the dough begins to come together.

 Transfer the mixture onto a floured surface and work quickly with your hands to bring it into a dough. Shape it into a ball and wrap it in plastic wrap. Place the dough in the refrigerator to chill for at least one hour.

 While the dough rests, clean the chiodini mushrooms. Gently remove the earthy stems using a knife and rinse the mushrooms carefully. In a large pot, bring water to a boil. Add the mushrooms and cook for about 10 minutes, skimming off any foam that forms on the surface. Once boiled, drain the mushrooms and set them aside to cool.
