Instructions

Prepare the Stove Top Grilled and Smoked Tandoori Chicken
- Clean, wash, and make 1-inch slits on the chicken breasts.
- In a bowl, mix all the marinade ingredients: curd, ginger, garlic, lemon juice, garam masala powder, kashmiri red chili powder, salt, coriander powder, and mustard oil.
- Coat the chicken breasts with the marinade and cover the bowl. Refrigerate for at least 3-4 hours (overnight marination will enhance the flavor).
- Heat mustard oil in a grilling pan and cook the marinated chicken until it is charred and fully cooked. Flip the chicken to cook both sides evenly.
- Once cooked, place the chicken in a wide bowl.
- Place a small steel bowl (covered with aluminum foil) in the center of the chicken. Heat a piece of charcoal until it starts burning, then place it in the small bowl.
- Pour 1 tablespoon of ghee onto the hot charcoal to produce smoke. Close the lid and let the smoke infuse into the chicken.
- After the smoke settles, shred the chicken and set aside.
-
Prepare the Grilled Sandwich
- Preheat the sandwich grill or use a griddle (tawa) if you don’t have a sandwich maker.
- Spread butter on one slice of bread and green chutney on the other.
- Place a cheese slice on one slice of bread, followed by the shredded smoked tandoori chicken. Close the sandwich with the second slice.
- Generously grease the sandwich grill with butter and place the sandwich inside.
- Grill for 5-7 minutes, or until the bread is golden brown and crispy.
-
Serve
- Serve the Cheesy Grilled Sandwich with Smoked Chicken alongside Napa Cabbage Coleslaw with Greek Yogurt and Sweet Potato & Rosemary Crisps for a satisfying weekend dinner. Enjoy!
