Brunswick Stew (Chicken & Pork) 🥘

Description: A beloved stew in our household and among our frequent dinner guests, this Brunswick Stew combines tender chicken, flavorful pork, and a medley of vegetables in a rich, hearty broth. Perfect for a cozy weeknight meal, serve with a side of crusty bread and butter for a satisfying dinner experience. The prep time listed excludes the preparation of the chicken and pork, which can be done ahead of time for convenience.

Ingredients:

Cooked pork 1 1/2 pounds
Diced tomatoes 1 1/4 pounds
Frozen whole kernel corn 2 cups
Butter beans 1 can
Onion 1, diced
Chicken broth 1 quart
Heinz ketchup 1/4 cup

Instructions:

  1. Begin by preparing the meats. Boil 1 1/2 pounds of chicken breasts with the bone until fully cooked. Additionally, purchase 1 1/4 pounds of smoked pulled pork from your local barbecue joint.

  2. If you’re unable to acquire smoked pulled pork, you can still infuse the stew with a smoky flavor by adding a few drops of liquid smoke to the broth.

  3. In a 6-quart Dutch oven, combine the diced onion, chicken broth, Heinz ketchup, white vinegar, Worcestershire sauce, brown sugar, salt, pepper, and optionally, hot sauce for a bit of heat.

  4. Stir in the thawed corn and butter beans, ensuring they’re evenly distributed throughout the pot.

  5. Add the diced tomatoes to the mixture, stirring gently to incorporate all the ingredients.
