Instructions

  1. Roast the Eggplant:
    Begin by roasting the eggplant directly over a gas flame. Keep turning it until the outer skin becomes charred and the inside is soft and smoky. Once done, turn off the flame and carefully peel off the blackened outer layer of the eggplant.

  2. Mash and Prepare the Mixture:
    Mash the roasted eggplant with a fork or masher and transfer it to a mixing bowl. Add yogurt, chopped green chili, cumin powder, garam masala, Kashmiri red chili powder, thinly sliced onion, and salt. Mix everything well, ensuring the flavors are evenly distributed.

  3. Smoke the Eggplant:
    For the traditional smoked flavor, heat a small piece of charcoal on high flame until it turns red hot. Once it’s fully heated, place it in a small metal bowl or foil cup and nestle this carefully in the center of the mashed eggplant mixture.

  4. Infuse the Smoky Flavor:
    Drizzle ghee over the hot coal, which will immediately produce smoke. Quickly cover the bowl with a tight-fitting lid and let the smoky flavor infuse into the eggplant for 3 to 5 minutes.

  5. Final Steps:
    After the infusion time, carefully remove the coal and mix the eggplant mixture once again. Garnish with freshly chopped coriander leaves.
