Corn Chowder with Chipotles Recipe

Ingredients:

  • 3 slices smoked bacon
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 3 small potatoes, peeled and diced
  • 2 cups corn kernels (fresh or frozen)
  • 1 chipotle chile in adobo sauce, minced
  • 3 cups milk
  • 1/2 – 3/4 teaspoon coarse salt (adjust to taste)
  • 1/2 teaspoon cracked black pepper
  • Fresh cilantro, chopped for garnish

Instructions:

  1. Cook Bacon: In a large saucepan over medium-high heat, cook the bacon until crisp. Remove the bacon and drain it on paper towels. Set aside. Reserve 1 tablespoon of bacon fat in the saucepan and discard the rest.

  2. Prepare Vegetables: Reduce the heat to medium. Add the chopped onion, minced garlic, and diced celery to the saucepan. Sauté until the vegetables are soft, about 5 minutes.

  3. Simmer Potatoes: Add the diced potatoes and chicken stock to the saucepan. Bring it to a boil, then cover and simmer for 10 minutes or until the potatoes are slightly tender.

  4. Add Corn and Chipotle: Stir in the red pepper, corn kernels, minced chipotle chile in adobo sauce, and continue to cook for another 10 minutes or until all the vegetables are tender.

  5. Finish Chowder: Crumble the reserved bacon and stir it into the chowder. If the chowder is too thick, adjust the consistency with 1/4 cup of milk and heat until steaming.

  6. Season and Serve: Season the chowder with salt and pepper to taste. Stir in the chopped cilantro just before serving.
