Ingredients:
- 3 slices smoked bacon
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 3 small potatoes, peeled and diced
- 2 cups corn kernels (fresh or frozen)
- 1 chipotle chile in adobo sauce, minced

Cook Bacon: In a large saucepan over medium-high heat, cook the bacon until crisp. Remove the bacon and drain it on paper towels. Set aside. Reserve 1 tablespoon of bacon fat in the saucepan and discard the rest.

Prepare Vegetables: Reduce the heat to medium. Add the chopped onion, minced garlic, and diced celery to the saucepan. Sauté until the vegetables are soft, about 5 minutes.
