This is a recipe that a good friend of mine shared with me recently, and let me tell you, it’s out of this world! The combination of flavors in this chipotle pesto is sure to delight your taste buds, and I hope you and your loved ones enjoy it as much as we have.

Ingredients:

  • 4-5 chipotle chiles
  • 1/3 cup parmesan cheese
  • 1/2 cup pine nuts
  • 1/2 cup olive oil
  • 2-4 garlic cloves

Instructions:

  1. Prepare the Garlic Oil: In a food processor, combine olive oil and garlic cloves. Pulse until the garlic is finely minced.

  2. Infuse the Oil: Let the mixture sit for at least 15 minutes, allowing the oil to absorb the flavor of the garlic.

  3. Combine Ingredients: Add the chipotle chiles, pine nuts, and olive oil mixture (garlic-infused) into the food processor.

  4. Blend: Pulse the ingredients until you achieve a smooth and creamy consistency.

  5. Incorporate Parmesan: Remove the mixture from the food processor and transfer it to an airtight container. Stir in the parmesan cheese until well combined.

  6. Refrigerate: Cover the container and refrigerate the chipotle pesto overnight to allow the flavors to meld together.
