Instructions:

Step Description
1. Cut the eggplants in half lengthwise.
2. Rub some oil over the cut side of the eggplant halves.
3. Roast or broil the eggplant halves until the skin is lightly burned, and the eggplant is completely soft. This usually takes about 12-15 minutes.
4. Once roasted, peel the eggplant and discard the skins.
5. Put the eggplant pulp into a bowl and mash it thoroughly with a potato masher.
6. Add finely chopped onion, minced garlic cloves, sliced green chilies, salt, chopped cilantro, and 1/2 tsp of oil to the mashed eggplant. Mix all the ingredients together very well.
7. Heat the remaining oil in a frying pan over medium heat.
8. Add the eggplant mixture to the pan and fry for 3-5 minutes, stirring frequently, until the mixture is fairly dry.
9. Once cooked, remove from heat and transfer the Eggplant Bharta to a serving dish.
10. Serve the Eggplant Bharta alone as a flavorful side dish or with steamed basmati rice for a complete meal. Enjoy!
