Smoked Stingray Stew (Mangut Ikan Pari Asap)

Indulge in the bold flavors of traditional Indonesian cuisine with this Smoked Stingray Stew, also known as Mangut Ikan Pari Asap. This hearty dish combines the rich taste of smoked stingray with a savory coconut milk-based sauce, creating a comforting and flavorful meal that is sure to impress.

Ingredients:

  • 500 grams smoked stingray (ikan pari asap)
  • Approximately 700 ml water
  • 5 pieces fried tofu (cut diagonally into 2)
  • 1 block tempeh (cut diagonally into several pieces)
  • 4 large green chilies (sliced diagonally)
  • 10 green bird’s eye chilies
  • 2 tomatoes (cut into pieces)
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 1 segment of galangal, smashed
  • 1 pack of coconut milk (Kara), diluted with 200 ml water
For the Spice Paste:
  • 5 cloves garlic
  • 5 shallots
  • 10 bird’s eye chilies
  • 1 segment of turmeric
  • 1/2 segment of kencur (aromatic root)
  • Salt, to taste
  • Sugar, to taste
  • Seasoning (optional)

Instructions:

  1. Prepare the Spice Paste:

    • Blend or grind garlic, shallots, bird’s eye chilies, turmeric, and kencur into a smooth paste. Set aside.
  2. Sauté the Spice Paste:

    • Heat a little oil in a pan and sauté the spice paste until it becomes aromatic.
  3. Add Aromatics and Vegetables:

    • Incorporate bay leaves, kaffir lime leaves, tomatoes, and smashed galangal into the pan. Continue to cook until the tomatoes start to soften.
  4. Simmer the Broth:

    • Pour in the water and bring the mixture to a boil. Season with salt, sugar, and optional seasoning to taste.
  5. Add Tempeh and Tofu:

    • Once the broth is boiling, add the tempeh and let it simmer for a few minutes to absorb the flavors.
  6. Add Smoked Stingray and Tofu:

    • Gently add the smoked stingray and fried tofu to the pan. Stir to combine.
  7. Incorporate Coconut Milk:

    • Slowly pour in the diluted coconut milk and allow the stew to simmer until everything is thoroughly cooked and the flavors meld together.
  8. Finish and Serve:

    • Check the seasoning and adjust if needed. Once the stew is well-cooked and aromatic, it is ready to be served.
  9. Enjoy Your Meal:

    • Serve the Mangut Ikan Pari Asap hot with steamed rice or as a flavorful side dish.
