Masala Pohe Recipe

Masala Pohe is a delightful and healthy breakfast dish from the cuisine of Karwar, Karnataka, typically made during Diwali and other special occasions. This flavorful poha (flattened rice) is infused with a combination of spices and a unique smoking method that makes it even more delicious. Ingredients:
- 2 cups Poha (flattened rice)
- 1 cup Onion, finely chopped
- 3/4 cup Coconut, grated
- 4 teaspoons Sugar
- 1 teaspoon Red chili powder
- 1-1/2 teaspoons Coriander powder
- 1 teaspoon Cumin powder
- Salt, to taste
- 1 tablespoon Oil (for tempering)
- 1 teaspoon Mustard seeds
- 1/4 teaspoon Asafoetida
- 1/4 teaspoon Turmeric powder
- 1 Charcoal piece (for smoking)

Instructions:
- Begin by soaking the poha in water for a minute. Drain the water and squeeze out any excess moisture.
- In a mixing bowl, combine the soaked poha, finely chopped onion, grated coconut, sugar, red chili powder, coriander powder, cumin powder, and salt. Mix everything thoroughly.
- For the smoking effect, heat the charcoal on a gas stove until red spots appear. Carefully remove it from the flame and place it in a small bowl. Set the bowl in the center of the poha mixture. Drizzle a little oil over the charcoal and cover the bowl with a lid. Let it sit for 1 minute to infuse the smoky flavor into the poha.
- After 1 minute, remove the charcoal and discard it. Keep the poha aside.
- Heat oil in a pan, and add mustard seeds. Allow them to crackle, then add asafoetida and turmeric powder. Cook for 10 seconds and turn off the gas.
- Pour this tempering over the poha mixture and stir well to combine all the flavors.
- Serve the Masala Pohe hot with Ginger Tea or Masala Tea for a satisfying breakfast.
