Irma from Yuma, Arizona, shared this delightful recipe with me. Serve this savory Southwest Turkey as a filling for Tacos or enchiladas, or over Rice, Pasta, or Cous Cous. Get creative with casseroles by mixing it with macaroni, noodles, Rice, or any other grain, then top or mix with a sprinkle of cheese before baking. And here’s a handy tip from Irma herself: always keep a box of Baking Soda within reach in your kitchen. It neutralizes the acidity in chili juice, just mix with water and apply generously, even to the eyes! Give it a try, it really works!

Ingredients:

  • 1 Roma tomatoes
  • 1 can Ortega chilies
  • 2 yellow onions
  • 1-2 tablespoons Worcestershire sauce
  • 4 teaspoons cumin seeds
  • 2 tablespoons chili powder
  • 3 teaspoons garlic powder
  • 1 turkey thighs (about 4 pounds)

Instructions:

Step Instructions
1 Place the Roma tomatoes and Ortega chilies in a crock pot set on high.
2 In a large sauté pan over high heat, sauté onions and jalapeños until onions are transparent.
3 Add the sautéed onions, jalapeños, and all other ingredients except the turkey to the crock pot. Mix well.
4 Submerge the turkey thighs into the pot.
5 Cover the pot and reduce heat to low.
6 Cook overnight for 10-12 hours.
7 Remove the turkey from the pot, debone it, cut across the grain into 1 1/2 inch wide strips, then shred with forks.
8 Return the shredded turkey to the pot and mix well.
