Ingredients

  • 1 pound ground beef (sirloin preferred for extra juiciness)
  • 3 tablespoons barbecue sauce
  • 5-6 dashes TABASCO® brand Chipotle Pepper Sauce (adjust to taste for desired heat level)
  • 1 1/2 teaspoons liquid smoke
  • 1/2 cup finely chopped onion
  • 1/4 pound smoked Gouda cheese, sliced or shredded
  • 1/4 pound cheddar cheese, sliced or shredded
  • 1/2 cup smoked ham, sliced
  • 2-3 tablespoons olive oil (for sautéing)
  • Additional barbecue sauce (for serving)
  • Mustard (Jack Daniels Hickory Smoke preferred, for serving)

Instructions

  1. Prepare the Ham and Onion:
    In a skillet, heat the olive oil over medium heat. Add the smoked ham slices and finely chopped onion. Sauté for a few minutes until the ham is lightly browned and the onions are softened. Remove from heat and wrap in foil to keep warm in the oven while you prepare the burgers.

  2. Prepare the Burger Mixture:
    In a large mixing bowl, combine the ground sirloin with the barbecue sauce, TABASCO® brand Chipotle Pepper Sauce, and liquid smoke. Mix thoroughly until the ingredients are well incorporated.

  3. Form the Patties:
    Divide the seasoned ground beef mixture into 2 or 3 equal portions, depending on your desired burger size. Flatten each portion into a patty shape. For each burger, take one patty, place a generous amount of smoked Gouda and cheddar cheese in the center, and then cover with a second patty. Press the edges together firmly to seal the cheese inside.

  4. Cook the Burgers:
    You can cook the cheese-stuffed patties either in the same skillet used to sauté the ham and onions or on a grill for a smoky char. For skillet cooking, heat a small amount of olive oil in the skillet over medium heat. Cook the patties for approximately 7 minutes on each side, or until they reach your desired level of doneness. If grilling, cook the patties over medium heat for a similar amount of time, flipping once halfway through.

  5. Assemble the Burgers:
    Once cooked, remove the patties from the skillet or grill. Place each burger on a serving plate. Top with 3 or 4 slices of the sautéed smoked ham and some of the sautéed onions.

  6. Serve and Enjoy:
