Grilled and Fried Chicken with Sweet Soy Sauce (Ayam Goreng Bakar Kecap)
Ingredients:

- 1 kg chicken, cut into pieces
- Cooking oil, for frying
Spice Paste:
- 4 cloves garlic
- 8 cm turmeric
- 5 cm galangal
- 1 tbsp coriander seeds
- 1 tsp pepper
- 100 ml water
- Salt and chicken broth powder, to taste
Grilling Marinade:
- 8 tbsp sweet soy sauce (kecap manis)
- 2 tbsp butter
Sambal (Chili Sauce):
- 3 shallots
- 1 garlic clove
- 4 large green chilies
- 7 bird’s eye chilies
- 1 green tomato
- Salt and sugar, to taste
Instructions:

Prepare the Chicken:
- Grind all the ingredients for the spice paste (garlic, turmeric, galangal, coriander seeds, pepper) into a smooth paste. Add water to facilitate grinding.
- Rub the spice paste all over the chicken pieces, ensuring they are well coated. Let it marinate for at least 30 minutes to allow the flavors to penetrate.

Frying the Chicken:
- Heat cooking oil in a frying pan over medium heat.
- Fry the marinated chicken until golden brown and cooked through. Remove from the oil and drain on paper towels to remove excess oil.

Marinating for Grilling:
- In a bowl, mix together the sweet soy sauce and butter. Coat the fried chicken pieces evenly with this marinade.

Grilling the Chicken:
- Prepare a grill or grill pan over medium-high heat.
- Grill the marinated chicken pieces briefly on each side until they are lightly charred and infused with the flavors of the marinade. Be careful not to overcook.

Making the Sambal:
- In a pot, boil water and add the shallots, garlic, green chilies, bird’s eye chilies, and green tomato. Cook until they are slightly wilted, about 5 minutes. Drain and let cool.
- Once cooled, grind or pound the boiled ingredients into a coarse paste. Season with salt and sugar to taste. Optionally, you can sauté the sambal for a richer flavor.
