Smyrna-Style Tzatziki with Torcelli

Ingredients:

White wine vinegar 2 tbsp
Extra virgin olive oil 4 tbsp
Garlic 4 cloves
Fresh dill 3 tbsp
Cucumber 1 medium
Greek yogurt 400g
Salt To taste
La Bottega di Olivia&Marino 12 (optional)
Black olives To taste

Instructions:

  1. Prepare the Cucumber:
    Begin by thoroughly washing the cucumber. Cut off the ends and grate it coarsely, keeping the skin on. Place the grated cucumber in a fine sieve over a bowl to drain the excess water. Let it rest for at least one hour to ensure that all the liquid is released from the cucumber.

  2. Prepare the Garlic:
    While the cucumber is draining, peel and finely chop the garlic. Use a mortar and pestle to crush the garlic into a creamy, smooth paste.

  3. Make the Tzatziki Sauce:
    In a large mixing bowl, add the Greek yogurt. To the yogurt, add the crushed garlic and grated cucumber, mixing well with a spoon or whisk until the ingredients are fully incorporated.

  4. Add the Vinegar and Olive Oil:
    Pour in the white wine vinegar and extra virgin olive oil, continuing to stir to combine the flavors.

  5. Flavor with Dill:
    Finely chop the fresh dill and add it to the tzatziki mixture. Stir well to distribute the dill throughout the sauce. Season with salt to taste, adjusting the seasoning as needed.

  6. Serve and Garnish:
    Once the tzatziki is well-mixed, it’s ready to be served. For an added touch of flavor, garnish with black olives and La Bottega di Olivia&Marino (optional). Serve this delightful tzatziki with rustic Torcelli, and enjoy!
