Ingredients:
For the Crust:
- 35 Oreo cookies
- 4 tablespoons butter, melted
- 2 tablespoons water
- 1/4 cup sugar
For the Filling:
- 24 ounces Philadelphia Cream Cheese, softened
- 2 large eggs
- 8 ounces sour cream
- 1 cup sugar
- 1 1/2 cups Nestle’ chocolate chips
- 5 Snickers candy bars, chopped
For the Glaze:
- 1 cup Nestle’ chocolate chips
- 2 tablespoons butter
- 1/3 cup heavy whipping cream, plus extra
- Crushed peanuts or extra Snickers shavings, for garnish
Instructions:
Crust Preparation:
- Preheat your oven to 375Β°F (190Β°C).
- Cover the bottom of a 10-inch spring-form pan tightly with aluminum foil to prevent leakage.
- Crush all the Oreo cookies finely using a food processor.
- Add melted butter, water, and sugar to the cookie crumbs and blend until well combined.
- Press the cookie mixture onto the bottom and about one inch up the sides of the spring-form pan.
- Bake the crust for 6-7 minutes until set. Use a flat-bottomed glass to gently press down if it rises during baking.
Filling Preparation:
- In a large bowl, beat the softened cream cheese until light and fluffy using an electric mixer.
- Add eggs one at a time, beating well after each addition.
- Mix in sour cream and sugar until smooth.
- Gently fold in the Nestle’ chocolate chips and chopped Snickers candy bars.
- Pour the filling onto the prepared crust, spreading it evenly.
Baking and Chilling:
- Place the spring-form pan on a cookie sheet lined with aluminum foil and bake at 375Β°F (190Β°C) for about 45 minutes, until the top is lightly browned. It’s okay if the center sinks a little.
- Cool the cheesecake in the pan on a wire rack, then refrigerate for at least four hours or overnight for best results.
Glaze Preparation:
- In a double boiler over medium heat, melt the chocolate chips, butter, and 1/3 cup of heavy whipping cream until just melted.
- Remove from heat and stir until smooth. Alternatively, microwave the mixture in a microwave-safe bowl.
- While still warm, stir in the remaining heavy whipping cream until well combined.
Assembling and Serving:
- Run a sharp knife around the edges of the spring-form pan to loosen the cheesecake.
- Release the spring-form and transfer the cheesecake to a serving dish.
- Pour the chocolate glaze over the top of the cheesecake, allowing it to cascade down the sides.
- Sprinkle crushed peanuts or additional Snickers shavings on top for extra indulgence.
- Refrigerate the cheesecake to allow the glaze to set before serving.
Tips:
- For a smoother filling, ensure all ingredients are at room temperature before mixing.
- To prevent cracks in the cheesecake, avoid overmixing the batter and bake it in a water bath.
- Customize your cheesecake by adding your favorite toppings or swapping Snickers with other candy bars.
