    • Transfer the mixture to a large mixing bowl or a flat surface like a thali. Allow it to cool for a couple of minutes at room temperature.
    • While the dough is still warm, sprinkle a little water at a time and knead the mixture into a soft, smooth dough. The dough should not be sticky but pliable and soft to touch.
  3. Shape the Dough:

    • Once the dough is ready, divide it into 12 equal portions. Roll each portion into a smooth ball and cover them with a damp cloth to prevent drying.
  4. Roll the Rotis:

    • On a flat surface, dust each ball with a little dry rice flour and roll it out into a thin circle, just like a regular roti. Be gentle while rolling to avoid cracks.
    • If the dough feels too sticky, sprinkle a little more rice flour to prevent sticking.
  5. Cook the Rotte:

    • Heat a skillet or tawa on medium heat. Place one rolled-out roti onto the hot skillet.
    • Cook the roti on both sides until light golden spots appear. Flip the roti gently and cook the other side. It should take about 2-3 minutes per side.
  6. Serve:

    • Once the roti is cooked, remove it from the skillet and serve hot with your choice of kurma (vegetable or meat curry) or peanut chutney for a complete South Indian breakfast experience.
