Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine the whole wheat flour, gram flour (besan), turmeric powder, red chili powder, chopped green chili, ginger paste, garam masala, and salt to taste.
  2. Add the grated bottle gourd (lauki) and mix well using your hands. Bottle gourd tends to release water, so mix until the dough comes together and forms a firm texture.
  3. If the dough feels too dry, add the hung curd (Greek yogurt) a little at a time. Be cautious not to let the dough become too soft.

Step 2: Shape the Dough

  1. Divide the dough into equal portions and roll each into a ball.
  2. Lightly dust a rolling board with flour. Flatten the dough balls and roll them out into thin discs. Avoid making the theplas too thick.

Step 3: Cook the Theplas

  1. Heat a tawa (griddle) over medium heat. Add 1 teaspoon of ghee and place a thepla on the hot surface.
  2. Cook the thepla, applying ghee on both sides as you flip it, until golden-brown spots appear and it becomes slightly crispy.
  3. To keep theplas soft, apply additional ghee after removing them from the tawa.

  1. Serve the warm Lauki Theplas with Aam Ka Achaar (Mango Pickle) and a refreshing cup of Filter Coffee for a wholesome breakfast or brunch.
