Prepare the Dough
Start by gently melting the butter, and set it aside to cool slightly. In a large bowl, sift the flour, then add the granulated sugar. In a separate small bowl, dissolve the fresh yeast in a little bit of the milk from the total quantity. Pour the yeast mixture into the remaining milk and add the beaten eggs. Mix the wet ingredients together. -
Mix the Dough
Add the wet mixture to the flour and sugar mixture, stirring with a spoon until everything is well combined. Transfer the dough onto a work surface and knead for about 10 minutes until you achieve a smooth, elastic dough. -
Let the Dough Rise
Place the dough back into the bowl, cover it with plastic wrap, and let it rise at room temperature for about 2 hours, or until it has doubled in size. -
Prepare the Filling
While the dough is rising, prepare the filling. In a bowl, mix together the granulated sugar and lemon zest. Melt the butter and set it aside to cool. -
Shape the Lemon Rolls

Preheat your oven to 180°C (350°F) in static mode. Once the rolls have risen, bake them for about 30 minutes, or until they are golden brown on top, placing the tray in the center of the oven. -
Prepare the Glaze
While the rolls are baking, prepare the glaze by mixing the cream cheese, powdered sugar, lemon zest, and lemon juice in a bowl. Stir until smooth and refrigerate for 30 minutes to set. -
