Ingredients

Ingredient Amount
Freshly brewed coffee 60 ml
All-purpose flour (00 type) 370 g
Granulated sugar 120 g
Unsalted butter (softened) 120 g
Egg yolk 1
Whole egg 1
Baking powder 6 g
Granulated sugar (for coating) To taste
Powdered sugar (for dusting) To taste

Instructions

Step 1: Start by preparing the dough. In a large mixing bowl, add the softened butter and granulated sugar. Using a wooden spoon, blend the two together until the mixture becomes creamy and smooth.

Step 2: Crack the whole egg into the butter-sugar mixture, and mix it well until fully incorporated. Next, add the egg yolk and stir again until the mixture is well combined.

Step 3: Gradually add the all-purpose flour and baking powder into the mixture, stirring continuously. The dough will begin to form as the ingredients come together.

Step 4: Once the dough has formed, incorporate the freshly brewed coffee into the mixture. This will give the biscotti its signature coffee flavor. Mix everything thoroughly, making sure the dough is uniform.

Step 5: Cover the bowl with plastic wrap and let the dough rest in the fridge for a while to firm up. This will make it easier to handle when shaping the biscotti.

Step 6: After chilling the dough, take small portions of the dough and roll them into balls roughly the size of a walnut. You should be able to make about 30 biscotti.

Step 7: Roll each dough ball in granulated sugar, ensuring each one is evenly coated. This will give the biscotti a slight crunch on the outside while keeping them soft on the inside.

Step 8: Place the sugared dough balls onto a baking sheet lined with parchment paper. Be sure to space them a few centimeters apart to allow room for spreading as they bake.

Step 9: Preheat your oven to 160°C (320°F) and bake the biscotti in a static oven for about 15 minutes, or until they are golden brown and cooked through.

Step 10: Once the biscotti are done baking, remove them from the oven and let them cool completely. Afterward, dust them with powdered sugar for an extra touch of sweetness.

Tips for Success:

  1. Coffee Choice: Make sure to use freshly brewed coffee for the best flavor. The richness of the coffee will be prominent in the biscotti, so opt for a medium or dark roast for a deeper taste.

  2. Chill the Dough: Chilling the dough before shaping the biscotti helps maintain their shape and makes it easier to handle.

  3. Storage: Store your biscotti in an airtight container at room temperature for up to a week. If you want to keep them longer, consider freezing them for up to a month.

  4. Flavor Variations: Feel free to add a handful of chocolate chips or chopped nuts into the dough for added texture and flavor. You can also experiment with different types of sugar for coating, like cinnamon sugar, for an extra twist.

These soft coffee biscotti are a wonderful treat to share with family and friends or to enjoy during a quiet moment with a hot cup of coffee. Their tender texture and rich coffee taste make them a perfect dessert or snack any time of the day!
