Parsi Rotli Recipe – Soft Parsi Style Rotis

Description:
Parsi Rotli is a soft, traditional Parsi flatbread made using milk and cooked slowly on a tawa. These rotis are perfectly cooked with no brown spots, ensuring a tender texture that pairs wonderfully with various Parsi dishes.

Ingredients:

  • 1 cup Whole Wheat Flour
  • 1/2 teaspoon Salt (optional)
  • 1/4 cup Milk
  • Water (as needed)
  • 1 teaspoon Ghee (for dough)
  • Ghee (for serving)

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Instructions:

  1. Prepare the Dough:
    In a large bowl, combine the whole wheat flour and salt. Gradually add milk and a small amount of water, mixing to form a firm dough. Add a teaspoon of ghee to coat the dough and knead until smooth.

  2. Rest the Dough:
    Cover the dough and set it aside to rest for 15 minutes. After resting, knead the dough again to smoothen it further and divide it into equal portions.

  3. Roll the Rotli:
    Preheat a tawa or skillet over medium-low heat. Roll each portion of dough into a ball and flatten it using the palm of your hand. Roll out each ball into a thin circle (approximately 6 inches in diameter) on a floured surface, ensuring it doesn’t stick.

  4. Cook the Rotli:
    Place the rolled dough on the preheated skillet. After a few seconds, small air pockets will form on the surface. Flip the rotli and press it gently with a folded kitchen napkin. Keep pressing until the rotli puffs up. Ensure you are cooking on low flame to prevent brown spots.

  5. Serve:
    Once puffed, remove the rotli from the skillet and place it on a flat plate. Optionally, spread a little ghee on the top side for extra flavor.

Serve the Parsi Rotli with dishes like Ringan Ravaiya (Parsi Style Stuffed Eggplant) and Iranian Berry Pulao with Caramelized Onion & Cranberry for a complete Parsi meal.
