Sookhi Moong Palak Dal Recipe

Ingredients:

  • 1 cup green moong dal (soaked overnight)
  • 1/2 cup spinach (chopped and boiled)
  • 2 tomatoes
  • 1-1/2 tbsp mustard oil
  • 1 tsp cumin seeds
  • 2 onions (chopped)
  • 5 cloves garlic (grated)
  • 1-inch piece ginger (grated)
  • 2 green chillies (finely chopped)
  • Salt to taste
  • 1/4 onion (thinly sliced)
  • 1 green chilli (finely chopped)
  • Fresh coriander leaves (for garnish)

Preparation Time: 20 minutes
Cooking Time: 45 minutes

Instructions:

  1. Drain the soaked moong dal and set it aside.
  2. In a mixer, blend the spinach and tomatoes into a smooth puree and keep aside.
  3. Heat mustard oil in a pan, add cumin seeds, and sauté for about 10 seconds.
  4. Add the chopped onions and cook until they turn brown.
  5. Add grated garlic, ginger, and chopped green chillies. Sauté for 1 minute.
  6. Stir in the spinach puree and salt, then cook for 2 minutes.
  7. Add the soaked moong dal to the pan and cook on high heat for 5 minutes.
  8. Reduce the flame, cover the pan, and let it cook for 20 minutes until the dal is tender and the water evaporates.
  9. Transfer to a serving dish and garnish with sliced onion, chopped green chillies, and fresh coriander leaves.

Serving Suggestion:
Serve the Sookhi Moong Palak Dal with a bowl of Gujarati Kadhi and Phulkas for a complete and satisfying meal.
