Sookhi Moong Palak Dal Recipe

Ingredients:
- 1 cup green moong dal (soaked overnight)
- 1/2 cup spinach (chopped and boiled)
- 2 tomatoes
- 1-1/2 tbsp mustard oil
- 1 tsp cumin seeds
- 2 onions (chopped)
- 5 cloves garlic (grated)
- 1-inch piece ginger (grated)
- 2 green chillies (finely chopped)
- Salt to taste
- 1/4 onion (thinly sliced)
- 1 green chilli (finely chopped)
- Fresh coriander leaves (for garnish)
Preparation Time: 20 minutes
Cooking Time: 45 minutes
Instructions:
- Drain the soaked moong dal and set it aside.
- In a mixer, blend the spinach and tomatoes into a smooth puree and keep aside.
- Heat mustard oil in a pan, add cumin seeds, and sauté for about 10 seconds.
- Add the chopped onions and cook until they turn brown.
- Add grated garlic, ginger, and chopped green chillies. Sauté for 1 minute.
- Stir in the spinach puree and salt, then cook for 2 minutes.
- Add the soaked moong dal to the pan and cook on high heat for 5 minutes.
- Reduce the flame, cover the pan, and let it cook for 20 minutes until the dal is tender and the water evaporates.
- Transfer to a serving dish and garnish with sliced onion, chopped green chillies, and fresh coriander leaves.
Serving Suggestion:
Serve the Sookhi Moong Palak Dal with a bowl of Gujarati Kadhi and Phulkas for a complete and satisfying meal.
