Soto Ayam-Flavored Fried Noodles

Ingredients:

  • 2 packs of instant noodles with Soto Ayam flavor (boil without the seasoning)
  • 1 carrot, julienned
  • 7 leaves of Napa cabbage, chopped
  • 2 packets Soto seasoning (discard the koya powder)
  • For the Aromatics:
    • 2 cloves garlic, thinly sliced
    • 1 shallot, thinly sliced
    • 2 small Thai chilies (optional, adjust according to your spice preference)
  • Cooking oil
  • Salt to taste
  • Optional additions: fried egg, scrambled egg, fried sausages, meatballs

Instructions:

  1. Prepare the Noodles:
    Boil the instant noodles according to the package instructions but omit the provided seasoning packets. Drain and set aside.

  2. Cook the Aromatics:
    Heat a splash of oil in a pan over medium heat. Add the sliced garlic, shallot, and optional Thai chilies. Sautรฉ until the aromatics are golden and fragrant.

  3. Add the Carrot:
    Add the julienned carrot to the pan. Stir-fry for a few minutes until the carrot begins to soften.

  4. Incorporate the Cabbage and Seasoning:
    Add the chopped Napa cabbage and Soto seasoning packets (excluding the koya powder). Stir well, allowing the cabbage to wilt and the flavors to meld.

  5. Combine with Noodles:
    Gently fold in the cooked noodles. Stir to ensure that the noodles are evenly coated with the seasoning and combined with the vegetables. Taste and adjust seasoning if needed, adding a pinch of salt if desired.

  6. Final Touches:
    Avoid overcooking to maintain a slightly moist texture.

  7. Serve:
    Transfer the noodles to a serving dish. Optionally, top with a fried egg, scrambled egg, fried sausages, or meatballs to enhance the dish according to your preference.
