Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups brown sugar
  • 2/3 cup shortening
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup milk (soured with lemon juice)
  • 1 egg

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Grease and flour two 8-inch round cake pans.
  3. Line the bottoms of the pans with wax paper for easy removal later.
  4. In a mixing bowl, combine the flour, salt, brown sugar, and shortening using a pastry blender until crumbly.
  5. Remove 1/2 cup of the crumb mixture and set it aside for later use.
  6. To the remaining crumb mixture, add the baking powder, cinnamon, and nutmeg. Mix well.
  7. In a separate bowl, mix together the soured milk (prepared by adding lemon juice to milk) and the egg.
  8. Combine the wet ingredients with the dry ingredients, stirring until well incorporated.
  9. Pour the batter evenly into the prepared cake pans.
  10. Sprinkle the reserved crumb mixture evenly over the top of the batter in each pan.
  11. Bake in the preheated oven for 20 to 30 minutes or until a toothpick inserted into the center comes out clean.
  12. Remove from the oven and allow the cakes to cool in the pans for a few minutes.
  13. Transfer the cakes to a wire rack to cool completely before serving.

Recipe Notes

  • Souring milk with lemon juice adds the necessary acidity for the baking powder to react properly. It’s okay if the milk curdles slightly; this won’t affect the final result.
  • Alternatively, you can use buttermilk instead of soured milk. However, if you don’t have buttermilk on hand, souring regular milk with lemon juice works just as well. Simply add the lemon juice to the milk while you prepare the dry ingredients.
