Tomato Onion Chutney, also known as Thakkali Vengayam Chutney in South India, is a flavorful and versatile chutney that pairs wonderfully with dishes like dosa, idli, or paratha. Mustard Seeds (Rai) 1/2 tsp
White Urad Dal (Split) 1 tsp
Curry Leaves 4-5 leaves

Instructions:

  1. Cooking the Base:
    Begin by heating 1 tablespoon of sesame oil in a pan. Once the oil is hot, add the chopped small onions. Sauté the onions until they turn soft and translucent, which should take about 5 minutes.

  2. Adding Tomatoes and Spices:
    Once the onions have softened, add the chopped tomatoes, slit green chili, salt, asafoetida, and turmeric powder. Stir well, and cook the mixture until the tomatoes soften and release their juices, which should take about 8 minutes.

  3. Grinding the Chutney:
    Allow the mixture to cool for a few minutes before transferring it to a blender. Grind the cooled mixture into a smooth paste. Once blended, transfer it to a bowl and set it aside.

  4. Tempering the Chutney:
    In a small pan, heat 1 teaspoon of sesame oil. Add the mustard seeds, white urad dal, and curry leaves. Let them sizzle for about 15 seconds or until the mustard seeds begin to pop and the urad dal turns golden brown.

  5. Final Mixing:
    Pour the tempering over the ground chutney and mix well to incorporate the flavors. Adjust the salt if needed.

  6. Serving:
