Ingredients:

Instructions:

  1. Prepare Giblets and Neck:

    • Bring giblets, neck, and 4 cups water to a boil in a medium saucepan over medium heat.
    • Cover, reduce heat, and simmer for 45 minutes or until tender.
    • Drain, reserving broth.
    • Chop giblets and neck meat, and set aside.
  2. Prepare the Gravy:

    • Melt 4 tablespoons of butter in a large skillet over medium heat.
    • Add chopped onion, celery rib, and carrot; sauté for 5 minutes until softened.
  3. Make the Roux:

    • Add 1/4 cup of all-purpose flour to the skillet, stirring until smooth and combined.
    • Cook for 1-2 minutes to eliminate the raw flour taste.
  4. Thicken the Gravy:

    • Gradually add the reserved broth, whisking constantly until the mixture thickens, about 10 minutes.
  5. Finish the Gravy:

    • Reduce the heat to low.
    • Remove the vegetables using a hand-held wire-mesh strainer, and discard, leaving the gravy in the skillet.
  6. Prepare the Egg Mixture:

    • In a separate bowl, whisk together 2 tablespoons of half-and-half and 2 egg yolks until well combined.
  7. Temper the Egg Mixture:

    • Gradually stir about one-fourth of the hot gravy into the yolk mixture to temper it.
  8. Combine Ingredients:

    • Add the tempered egg mixture to the remaining hot gravy in the skillet, stirring constantly.
  9. Cook Giblets and Neck Meat:

    • Return the chopped giblets and neck meat to the skillet.
    • Cook, stirring constantly, for 4 to 5 minutes or until a thermometer registers 160°F.
  10. Season and Serve:

    • Stir in 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1/2 teaspoon of poultry seasoning.
