Catfish, arguably the South’s most celebrated fish, takes center stage in these delightful Creole Catfish Cakes, perfect for serving as appetizers or as a main dish. With a flavorful blend of Creole spices and savory ingredients, these cakes are bound to impress your taste buds and satisfy your cravings for a taste of the South.

Ingredients:

Ingredient Quantity
Catfish fillets 2
Butter 1/3 cup
Margarine 3/4 cup
All-purpose flour 2 tbsp
Milk 1 cup
Salt 1/2 tsp
Pepper 1/2 tsp
Dry mustard 1/2 tsp
Red bell peppers 2 tbsp, diced
Green onion 1, finely chopped
Hot sauce 1-2 tsp
Breadcrumbs 1/2 cup

Instructions:

  1. Prepare the Catfish:

    • Place the catfish fillets on a lightly greased rack in a broiler pan.
    • Broil the fillets 5 inches from the heat for 10-15 minutes or until the fish is done and flakes easily with a fork.
    • Transfer the cooked fillets to a bowl, flake the fish, and set aside.
  2. Prepare the Sauce:

    • In a saucepan, melt 1/3 cup of butter over low heat.
    • Add in the all-purpose flour and stir with a whisk until smooth.
    • Cook and whisk constantly for 1 minute.
    • Gradually add in the milk, cooking and whisking constantly over medium heat for 8 minutes or until the mixture is thickened and bubbly.
    • Add in the salt, pepper, and dry mustard, stirring to combine.
    • Pour the sauce over the flaked fish.
  3. Combine Ingredients:

    • To the fish mixture, add 1/2 cup of breadcrumbs, diced red bell peppers, chopped green onions, and hot sauce.
    • Stir all the ingredients together until well combined.
    • Cover the bowl and chill the mixture for at least 1 hour to allow the flavors to meld.
  4. Shape and Fry the Patties:

    • Shape 1/4 cup of the fish mixture into a patty and repeat with the remaining mixture.
    • Coat each patty evenly with the remaining breadcrumbs.
    • In a large skillet, melt 1 tablespoon of butter and add 1 tablespoon of oil.
    • Fry the patties in batches, cooking for 3 minutes on each side or until lightly browned, adding more butter and/or oil as needed.
  5. Serve:

    • Serve the Creole Catfish Cakes hot, accompanied by tartar sauce, mustard sauce, or any condiment of your choice.
