A delightful entree perfect for serving to company or enjoying with your family. This Fiesta Chicken recipe is one of my all-time favorites. It pairs wonderfully with Spanish rice or green chile rice, adding a burst of flavor to your meal.

Ingredients:

Instructions:

Saute Onion:
- Heat oil in a 10-inch skillet over medium heat.
- Add the onion and sauté until tender.

Prepare Sauce:
- Stir in the green olives, tomatoes, celery ribs, garlic cloves, bay leaves, water, capers, dried oregano leaves, salt, and pepper.
- Heat the mixture to boiling, then reduce the heat to low.
- Simmer, uncovered, for 30 minutes to allow the flavors to meld.

Cook Chicken:
- Place the chicken breast halves, skin sides up, in a single layer in the skillet with the sauce.
- Cover and cook over medium-low heat for 30 minutes, ensuring the chicken cooks evenly.

Add Mushrooms:
- After 30 minutes, add the fresh mushrooms to the skillet.
- Cover and continue to cook until the chicken is fully cooked and tender, approximately 15 minutes longer.

Serve:
- Once the chicken is done, serve hot alongside Spanish rice or green chile rice for a delicious meal bursting with Southwestern flavors.
