Instructions
-
Prepare the Soy Mayonnaise:
Start by making the soy mayonnaise. In a tall, narrow container, add the egg yolk and the soy sauce. Using an immersion blender, blend the ingredients thoroughly until the mixture becomes a smooth, creamy sauce. Transfer the soy mayonnaise into a small bowl and set it aside. -
Prepare the Lettuce:
Wash the lettuce leaves thoroughly and cut them in half, setting them aside for later use. -
Prepare the Fontina Cheese:
Carefully peel off the rind of the Fontina cheese. Cut it into thin slices, leaving it ready to be grilled. -
Prepare the Burger Patties:
In a bowl, season the ground veal (or beef) with salt and mix it well. Now, take a piece of parchment paper and place it on a flat surface. Using an 11 cm diameter cookie cutter, press 200g of the seasoned meat mixture into the cutter, ensuring that it holds its shape. Once you’ve pressed the meat into the mold, carefully lift off the cutter, and you should have a compact burger patty. Repeat this process for the remaining patties. -
Grill the Cheese and Patties:
Heat a pan over medium-high heat and add a little seed oil for frying. Place the Fontina cheese slices on the hot pan and sear them until they develop a light crust, just on one side. In the same pan, cook the burger patties to your preferred level of doneness, ensuring they get a nice sear. -
Toast the Buns:
Lightly toast the hamburger buns in the same pan or oven until golden brown. You can add a little extra virgin olive oil to the pan to help with the toasting. -
Assemble the Burgers:
Spread a generous amount of soy mayonnaise on the bottom half of each toasted bun. Place a layer of lettuce on top of the mayonnaise. Add a burger patty on top of the lettuce and follow it with a slice of grilled Fontina cheese. Add a slice of fresh tomato, if desired, for a burst of color and flavor. Finally, close the burger with the top half of the bun. -
Serve:
Your beef burger with soy mayonnaise is now ready to serve! Enjoy it hot, and savor the combination of creamy mayonnaise, savory beef, and melted Fontina cheese.
