Soya Keema Masala (High Protein Vegetarian)

Ingredients:
- 1/2 cup soya chunks
- 1 tomato, finely chopped
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 3 potatoes
- 1/4 cup green peas
- 1 teaspoon cumin seeds
- 1 tablespoon oil
- 1 1/2 teaspoons ginger garlic paste
- 1 tablespoon coriander powder
- 1 tablespoon red chili powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon garam masala powder
- Salt, to taste

Instructions:
- Begin by boiling 2 cups of water in a saucepan. Add 1 teaspoon salt and the soya chunks. Let it soak in the hot water for 12-15 minutes. Drain the water and set the soya chunks aside.
- Soak the green peas in hot water for about 3 minutes, then drain and set them aside.
- Wash, peel, and chop the potatoes. Place them in a pressure cooker and cook for 2 whistles. Set aside.
- In a pan, heat the oil and add cumin seeds. Cook for 15 seconds.
- Add the chopped onion and green chilies to the pan, cooking until the onion softens.
- Stir in the ginger garlic paste and cook for 2 minutes.
- Add the chopped tomatoes and cook until they soften.
- Add the coriander powder, red chili powder, turmeric powder, and salt to the mixture. Let it cook for 15 seconds.
- Add the soya chunks, boiled potatoes, and green peas to the pan. Stir well, cover, and cook for another 10 minutes on low heat.
- Garnish with fresh coriander leaves and serve.
