Slow Cooker Arroz Con Pollo Recipe

Prep Time: 20 minutes
Cook Time: 6 hours
Total Time: 6 hours 20 minutes
Servings: 6

Ingredients:

  • 1/4 teaspoon saffron threads
  • 1 teaspoon turmeric
  • 3 pounds chicken pieces
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • Freshly ground black pepper, to taste
  • 1 1/2 cups converted long grain rice
  • 1 can (14.5 ounces) diced tomatoes
  • 1 green bell pepper, chopped
  • 1 cup green peas
  • Optional: Green olives and hot pepper sauce for garnish

Instructions:

  1. Brown the Chicken:
In a non-stick skillet, heat oil over medium-high heat. Add chicken pieces in batches and brown lightly on all sides. Transfer the browned chicken to the slow cooker stoneware.

  2. Prepare the Base:
Reduce the heat to medium. Add chopped onions to the skillet and cook, stirring occasionally, until softened. Add minced garlic, salt, and pepper, cooking for an additional minute until fragrant.

  3. Combine Ingredients:
Add the rice to the skillet and stir until the grains are well coated with the onion and garlic mixture. Stir in saffron threads, turmeric, diced tomatoes (with their juices), and chicken stock.

  4. Transfer to Slow Cooker:
Transfer the rice mixture to the slow cooker stoneware, combining it with the chicken pieces already placed there. Stir to ensure everything is evenly distributed.

  5. Cooking Process:
Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. The chicken should be tender and the rice fully cooked. To check doneness, ensure the chicken juices run clear when pierced with a fork.

  6. Add Vegetables:
About 20 minutes before serving, stir in chopped green bell pepper and green peas. Cover again and continue cooking on HIGH until the vegetables are heated through.

  7. Serve:
Once ready, garnish the Arroz Con Pollo with green olives if desired. Serve hot with a side of green salad and crusty bread. Pass around hot pepper sauce for those who enjoy an extra kick.

  8. Tips:

    • If you’re short on time, you can skip browning the chicken. Just ensure any excess skin is removed to prevent the dish from becoming too fatty.
    • Saffron adds a distinct flavor and color to the dish. Use threads rather than powder for the best results.
    • Turmeric can mimic the color of saffron but won’t replicate its unique flavor profile.

Enjoy this flavorful and comforting Spanish-inspired dish that’s perfect for a family meal or entertaining guests. It’s hearty, delicious, and sure to become a favorite in your recipe collection!
